4 boneless, skinless chicken breasts

3 cloves garlic, minced

4 tablespoons canola oil

1/2 teaspoon cumin

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup Mandelin Natural Sliced Almonds, Dry Roasted - BUY NOW

1/2 cup red pepper, diced

1/2 cup cilantro leaves

1/2 cup mango, diced
-
1/2 cup avocado, diced

1 teaspoon ginger
-
1 teaspoon lemon juice
-
1 teaspoon lime juice

Dash salt and pepper

Directions
Light the grill. In shallow dish, combine 3 tablespoons canola oil and minced garlic. Rinse the chicken and pat dry.
Place paprika, cumin, oregano, salt, and pepper in a small bowl and rub the chicken with mixture.
Next, coat the chicken with 2/3 of the garlic oil. Grill the chicken over moderately high heat, basting with remaining garlic oil, until done.
Dice red pepper, cilantro, mango, avocado and ginger, and combine in large bowl. Add sliced, roasted almonds, lemon and lime juice, salt, and pepper. Stir. Top chicken with the salsa.
