1/2 cup almond or olive oil

1 jar sun dried tomatoes in oil

1 eggplant roasted and chopped

2 cloves garlic

1 teaspoon salt

1/2 teaspoon cumin

1/2 teaspoon paprika

1/4 teaspoon black pepper

1 tablespoon fresh parsley

Squeeze of lemon (optional)
