Spicy Almond Dip

Ingredients

1 cup Mandelin Blanched Almond Flour

1/2 cup almond or olive oil

1 jar sun dried tomatoes in oil

1 eggplant roasted and chopped

2 cloves garlic
-
1 teaspoon salt

1/2 teaspoon cumin
-
1/2 teaspoon paprika
-
1/4 teaspoon black pepper

1 tablespoon fresh parsley
-
Squeeze of lemon (optional)
Directions
Grind all ingredients together in a food processor or blender.

Serve with vegetables, bread, or pita chips.
