An easy, healthy side salad you'll want to serve at all your summer barbecues.
Ingredients

4 cups cubed, seeded watermelon

5 ounces feta cheese cut into cubes

1 cup Mandelin Natural Whole Almonds

fresh mint leaves for garnish

thin lime slices for garnish

½ cup red wine vinegar
-
2 teaspoons honey
-
¼ teaspoon salt
-
¼ teaspoon ground pepper
-
¼ extra virgin olive oil
-
squeeze of fresh lime
For the salad:
For the dressing:
Directions
Whisk together vinegar, oil, honey, salt, pepper and lime juice in a small bowl.
Combine watermelon, feta and almonds in a large bowl. Stir in 1/2 cup of the vinaigrette. Refrigerate for at least 20 minutes or up to one hour.
For serving, add mint and lime slices then stir in remaining dressing.
