A healthier, savory crust for white fish.
Ingredients

200 grams Mandelin Blanched Whole Almonds, chopped

50 grams breadcrumbs

40 grams flour
-
Salt and pepper

Cayenne
-
1 egg
-
4 tablespoons milk

4 fillets of rosefish (each 150 grams)
Directions
Heat the oven to 300 °F.
Mix the almonds and the breadcrumbs and put them on a plate.
Mix flour with salt, pepper and cayenne, and put them also on a plate.
Stir egg and milk in a deep plate
Wash fish fillets and dry them with a paper towel.
Turn the fish in the flour and knock off the excess. Turn the fish then in the egg and in the almond-breadcrumbs. Press on the almonds.
Put fish on a baking tray and bake in the hot oven for 15 minutes.
