Ingredients

1 (9-inch) prepared pie shell

1-1/4 cups grated cheese (Swiss, Gruyère, mozzarella)

1-1/2 cups thinly sliced zucchini

1 cup sliced onions

2 tablespoons butter

4 eggs
-
1/2 cup milk or light cream

1/4 teaspoon nutmeg

1/4 teaspoon salt
-
1/8 teaspoon black pepper

3/4 cup Mandelin Natural Sliced Almonds or Blanched Sliced Almonds
Directions
Preheat oven to 375 degrees.
Line prepared pie shell with cheese.
In a large skillet over medium heat melt butter, and sauté zucchini and onions 7 to 9 minutes or until golden. Drain any liquid, and spoon vegetables into pie shell.
Beat together eggs, milk or cream, nutmeg, salt and pepper. Pour this mixture over vegetables.
Sprinkle almonds over top and bake 30 minutes or until filling is set and top is golden.
Serve at room temperature.
