2-2/3 cups Mandelin Blanched Almond Flour or Natural Almond Flour

3/4 cup cocoa powder

1/2 cup sugar

1/2 baking soda

1/2 teaspoon salt

2 tablespoons vegetable oil

1/2 cup maple syrup

2 eggs

*creamy filling of choice
Directions
Preheat oven to 350°F.
Whisk together the dry ingredients in a mixing bowl until combined.
Add eggs, oil, vanilla extract and maple syrup then mix until incorporated.
Line a baking sheet with parchment paper.
Using a cookie scoop or ice scream scoop, form roughly two tablespoon cookies and place on the sheet. The yield should be roughly 16-20 halves.
Bake the middle shelf for 10-12 minutes.
Let cool completely. Apply the spread of choice on one half and put together with another to make a sandwich.
