A salad doesn't have to be green. Citrus is in prime season during the winter. Slice it up and top with a smooth almond butter dressing to balance the sweetness.
2 oranges
2 blood oranges
1/4 cup Mandelin Natural Roasted Almond Butter
1 tablespoon plus 1 teaspoon raspberry vinegar
salt and pepper to taste
3/4 cup fresh pomegranate seeds
Fresh mint for garnish
Peel the oranges, getting rid of as much pith as possible. Cut into slices.
Make the dressing. Whisk together olive oil, almond butter and vinegar in a small bowl until smooth; season with salt and pepper.
Divide orange slices among four salad plates and drizzle with dressing; top with pomegranate and mint.
Optional: serve on a bed of bitter greens such as arugula or chicory.
